In a process called "Live Action Reference" modeling, actors and actresses would play out scenes for animators to study- these scenes influenced not only the animation of the character, but the personality and mannerisms as well.
Oftentimes, the voice actor was used as the live model as well, (this was done for Alice in Wonderland). Other times these two roles were carried out by different people (as was the case with Malificent in Sleeping Beauty)

these rare videos show just how elaborate the staging was for some of these scenes- there were often full "sets" and props used! Animators would watch these videos over and over again to get the motions just right.
It has been said that Prince Phillips' character in Sleeping Beauty was actually closer to what the Prince from Snow White was supposed to be like- he was to have a more active role in the film, but disney was afraid that his animators did not yet have the skills to animate the prince (as they had little practice with male figures) and many of his traits were passed on to Prince Phillip later on.
